Description:
El Rescatado white was the first organic white wine in the world made from 100% white albarín variety. We produce a maximum of 10,000 bottles.
Viticulture:
Wine made 100% from the white albarín variety selected from our existing organic vineyards in the southern part of the province of León.
Soil:
Deep, acidic, very poor soils, sandy loam texture, with a large amount of gravel and pebbles.
Winemaking:
Harvest: Manual in 25 kg boxes.
Cold pre-maceration for 8 hours in a pneumatic press at 8ºC.
Destemming in stainless steel for 24 hours at 8ºC.
Alcoholic fermentation for 25-30 days at 14ºC.
Malolactic fermentation, no.
Bentonite clarification method.
Stabilization method by cold storage for 15 days at -5ºC.
Amicrobic filtration by 0.45 microns.
Tasting notes:
This organic wine, pioneer in the whole world, presents a beautiful greenish yellow dress in sight. Clean and bright.
On the nose we find fresh tropical fruits, herbaceous notes and muscatel background.
In the mouth it is dry, fresh, very ample and glyceric, with a very long and elegant aftertaste.
